In a large bowl, combine 2 cups jowar flour and 0.5 tsp salt, mixing thoroughly while the flour is dry.
Heat 1 cup water in a small saucepan just until simmering, then slowly stream it into the flour, stirring constantly for even hydration.
Knead the mixture while still warm for 3-5 minutes, working the dough until soft and pliable—adjust with extra water or flour for smoothness.
Divide the dough into 6 equal portions; roll each into a ball, then flatten and gently press into thin rounds (about 6-inch diameter) using your palms or a rolling pin.
Heat a cast iron or non-stick skillet over medium-high flame; place a roti on the pan and cook for 30-40 seconds, then flip and cook the other side until brown spots appear, pressing lightly with a cloth for puffing. Repeat for all rotis.
