Mussels blasted with black pepper and lemon in a briny Neapolitan broth. This high protein mediterranean dish is a fresh, healthy family appetizer that's virtually fat-free and full of flavor.
Scrub and rinse mussels thoroughly under cold running water; debeard and discard any that are open and do not close when tapped.
In a large pot over medium heat, add the olive oil and sliced garlic. Sauté briefly just until fragrant, about 1 minute, ensuring the garlic doesn't brown.
Add the cleaned mussels to the pot, immediately sprinkle with black pepper and salt, and toss to coat evenly.
Pour in 1/2 cup of cold water, cover with a tight-fitting lid, and steam on high heat for 3–5 minutes, shaking the pot occasionally, until all mussels have opened.
Uncover, squeeze lemon juice over mussels, scatter chopped parsley on top, and serve immediately in bowls with plenty of broth. Discard any unopened mussels.
