Cut the corn tortillas into triangles and set them aside on a dry surface.
Heat vegetable oil in a large skillet over medium-high heat. Fry the tortilla triangles in batches until golden and crispy, about 1–2 minutes per side. Drain them on a paper towel-lined plate.
To make the salsa, simmer tomatillos, jalapeño, and 1/2 of the white onion in boiling water for 7 minutes until tomatillos turn olive green. Drain and transfer to a blender.
Add garlic, fresh cilantro, 1/2 tsp salt, and chicken broth to the blender. Blend until smooth and adjust the seasoning with more salt and pepper as needed.
Pour the salsa into a large skillet and bring it to a gentle simmer over medium-low heat. Add the crispy tortilla chips to the salsa, tossing quickly and gently to coat. Simmer just until chips begin to soften, about 2 minutes—do not overcook.
Immediately plate the chilaquiles and top with crumbled queso fresco, drizzled Mexican crema, and raw sliced onion. Serve right away for the best texture.
