Golden millet porridge with red dates is a warming, nutritious breakfast. A healthy, vegetarian dish ideal for clean eats, lower cholesterol, and family wellness.
Rinse the millet thoroughly under running water using a fine-mesh sieve until the water runs mostly clear.
Place the rinsed millet, water, and pitted red dates in a medium pot. Set over high heat and bring to a gentle boil.
Once boiling, lower the heat to a very gentle simmer. Skim any foam that appears on the surface and stir gently.
Cover the pot partially to prevent boiling over. Simmer for 35–40 minutes, stirring occasionally to prevent sticking, until the millet grains bloom and thicken the porridge.
Uncover, stir in the salt, and simmer uncovered for 2–3 more minutes if a thicker texture is desired. Serve hot.
