Preheat a grill pan over medium-high heat. Lightly season the chicken breast with salt and half the black pepper on both sides.
Grill the chicken breast for 6–7 minutes per side until fully cooked (internal temperature 165°F), taking care not to overcook for moist texture. Let rest for 5 minutes, then slice thinly.
While the chicken is grilling, combine olive oil, lemon juice, Dijon mustard, honey, the remaining salt, and pepper in a small bowl. Whisk thoroughly to create the vinaigrette.
In a large mixing bowl, place baby spinach. Add halved cherry tomatoes, thinly sliced red onion, and sliced cucumber.
