Flaky, caramelized puff pastry layers are a beloved Mexican bakery treasure. This crispy, family-friendly pan dulce is a sweet, buttery indulgence perfect with morning coffee.
Preheat oven to 400°F (200°C) and line two baking sheets with parchment paper for even caramelization.
Thaw puff pastry until pliable. On a floured surface, roll each sheet into a rectangle about 1/8-inch thick for optimal crispness.
Brush melted butter evenly over pastry, then sprinkle with half the sugar mixed with cinnamon and salt for layered flavor.
Cut into 8 equal rectangles. Place on prepared sheets, leaving space to allow caramelization and puffing. Chill for 10 minutes to help flakes set.
Beat the egg and lightly brush each pastry top for shine. Sprinkle remaining sugar mix on top, pressing gently to adhere.
Bake each sheet in the center of the oven for 18–22 minutes, rotating once, until deep golden and crisp. Cool completely before serving to set the delicate layers.
