Til Chikki is a treasured Indian confection that brings sweetness and joy to every celebration. This traditional dessert is lovingly prepared for family festivals, religious occasions, and special moments.
Heat a heavy-bottomed skillet over medium heat. Add sesame seeds and toast, stirring constantly, until fragrant and light golden (about 3–4 minutes). Remove immediately to avoid burning.
Grease a flat tray or parchment paper with 1 tsp ghee. Set aside for later use.
In the same skillet, add jaggery and 1 tsp ghee. Melt on low heat, stirring occasionally, until jaggery liquefies and forms a thick syrup (about 6–8 minutes). To check consistency, drop a small amount in cold water; it should harden instantly.
Reduce the heat to low. Quickly add the toasted sesame seeds and cardamom powder to the syrup and mix thoroughly, ensuring the sesame is well coated but not overcooked.
Pour the hot mixture immediately onto the greased tray. Flatten with a rolling pin or spatula to ¼ inch thickness while still warm. Score into pieces, then allow to cool completely so the Til Chikki sets hard.
Once cooled, break along the scored lines for even pieces and store in an airtight container to retain crispness.
