Rinse the rice thoroughly in cold water until the water runs mostly clear.
Combine the rice with 8 cups of water in a large pot. Bring to a boil over medium-high heat, stirring occasionally to prevent sticking.
Reduce the heat to low as soon as it reaches a boil, then simmer uncovered, stirring every 10–15 minutes to prevent scorching on the bottom.
Cook low and slow for 50–60 minutes, until the grains have broken down and the congee reaches a creamy, porridge-like consistency. Add more hot water if you prefer it thinner.
Season with salt to taste, ladle into bowls, and top each serving with a generous helping of pickled vegetables just before serving.
