Bedmi Poori Aloo is a wholesome Indian vegetable dish cooked with traditional spices and fresh ingredients. This healthy vegetarian preparation is a family staple that supports clean eats and balanced nutrition.
Soak split urad dal in cold water for at least 2 hours, then drain well. In a blender, pulse the dal to a coarse paste with 1 tsp ginger paste.
In a large bowl, combine whole wheat flour, ground turmeric, 0.5 tsp salt, and the urad dal paste. Knead, adding water little by little until a smooth, moderately stiff dough forms. Rest for 20 minutes covered.
Peel and cube potatoes. In a large saucepan, add canola oil (about 2 tbsp reserved for the aloo) and heat over medium. When hot, add cumin seeds, remaining ginger paste, and chopped green chili. Sauté for 1 minute until fragrant.
Add potato cubes, ground coriander, red chili powder, garam masala, 1.5 tsp salt, and 1 cup water. Cover and simmer over medium-low heat until potatoes are tender but not falling apart, about 15–18 minutes. Adjust seasoning if needed and finish with chopped cilantro.
Meanwhile, divide dough into golf ball–sized portions. Roll each into a disc about 4 inches across. Heat remaining canola oil in a heavy pan to 350°F (medium-high). Fry each poori, pressing gently for puffing, until golden on both sides—about 1 minute per side. Drain on paper towels.
Serve hot bedmi pooris with spiced aloo curry. Garnish with fresh cilantro as desired, and serve immediately for best texture.
