In a medium, heavy-bottomed saucepan, combine sugar, corn syrup, water, butter, and salt. Cook over medium heat, stirring until the sugar dissolves completely and the mixture starts to boil.
Attach a candy thermometer without touching the bottom. Continue heating, swirling the pan occasionally (do not stir), until the temperature reaches 250°F (hard ball stage). Carefully monitor heat to prevent scorching.
Remove from heat immediately. Stir in vanilla, food coloring, and flavor extracts. Pour the hot mixture onto the prepared baking sheet and let cool just enough to handle—about 10–15 minutes.
