Fafda Jalebi is a crispy, spiral-shaped Indian sweet soaked in fragrant sugar syrup until golden and glistening. This iconic street dessert is a family breakfast treat and festive celebration essential.
In a mixing bowl, combine chickpea flour, all-purpose flour, baking soda, yogurt, and water; knead to make a soft, smooth dough for fafda. Rest for 15 minutes covered.
Heat oil in a deep pan to 350°F. Pinch portions of dough, shape into thin strips, and carefully slide them into the hot oil. Fry fafdas in batches, turning occasionally, until golden and crisp. Drain excess oil using paper towels.
For jalebi, mix corn starch with 2 tbsp all-purpose flour and water to make a flowing batter; allow it to rest for 20 minutes. Pour batter into a squeeze bottle or piping bag.
Heat oil for jalebi to 350°F. Pipe spiral shapes into the oil and fry until crisp and light golden, about 1 minute per side. Remove onto wire rack to drain.
Prepare sugar syrup in a saucepan: combine sugar, saffron, cardamom powder, lemon juice, and 1 cup water. Bring to boil, then simmer until single thread consistency (about 5–7 minutes). Dip fried jalebis in hot syrup briefly, then drain excess.
Serve hot, crispy fafda alongside syrup-soaked jalebi for an authentic celebration treat.
