Heat a large nonstick skillet over medium-high heat. Add the sesame oil and swirl to coat the pan.
Add diced onion and sauté for 3 minutes until soft. Add minced garlic and ginger, stirring for another minute until fragrant.
Add ground pork and cook, breaking it up with a spatula, until the pork is browned and no longer pink, about 5–6 minutes. Drain excess fat if necessary.
Stir in soy sauce, dark soy sauce, brown sugar, white pepper, and water. Reduce heat to medium-low and simmer for 7–8 minutes, letting the sauce thicken and fully coat the pork.
