Chicken smothered with caramelized onions and a light, tangy sauce. This healthy, high protein chicken dish is a quick, family-friendly dinner with sweet, savory depth.
Season the chicken breasts on both sides with salt, black pepper, and smoked paprika.
Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 2–3 minutes per side until lightly golden but not cooked through. Remove and set aside.
Lower the heat to medium. Add sliced onions and a pinch of salt to the pan, stirring frequently. Let them cook for about 8–10 minutes until deeply golden and caramelized, scraping the pan often to avoid burning.
Add minced garlic and bay leaf; sauté for 1 minute until fragrant. Pour in the red wine vinegar, stirring well to deglaze the pan.
Return the chicken to the skillet, nestling among the onions. Add chicken broth, cover, and simmer on low for 8–10 minutes or until the chicken is cooked through and tender.
Remove the lid for the last few minutes to thicken the sauce if desired. Discard the bay leaf, taste and adjust seasoning, then serve hot with caramelized onions spooned over the chicken.
