Preheat your oven to 350°F (175°C) and line a standard muffin pan with paper liners.
In a large mixing bowl, mash the ripe bananas very well until mostly smooth.
Add melted butter, sugar, eggs, and vanilla extract to the bananas, whisking until fully combined.
In a separate bowl, sift together flour, baking powder, baking soda, and salt. Gradually fold dry ingredients into the wet mixture—do not overmix.
Gently stir in most of the chopped walnuts, reserving a few for topping. Divide batter evenly among muffin cups, filling each about 3/4 full.
Sprinkle reserved walnuts on top of the muffin batter. Bake for 18–22 minutes, checking with a toothpick inserted in the center for doneness.
Cool muffins in the pan for 5 minutes, then transfer to a wire rack to finish cooling completely before serving.
