Tender cauliflower is stir-fried with crispy pork belly slices for a rich, savory combination. This protein-enhanced family dish balances the mild vegetable with deeply savory pork.
Heat a large skillet or wok over medium-high heat; add the pork belly slices in a single layer and cook until browned and crispy, about 5–6 minutes. Remove most of the rendered fat, leaving about 1 tablespoon in the pan.
Reduce heat to medium. Add chopped onion and minced garlic to the pan. Stir-fry for 2 minutes until fragrant and onions are slightly softened.
Add cauliflower florets and increase heat to high. Stir-fry for 3–4 minutes, ensuring the florets are coated in fat and aromatics.
Pour in soy sauce and oyster sauce. Toss well and cover with a lid, steaming the cauliflower for 4–5 minutes until just tender but still crisp.
Uncover, drizzle with sesame oil, and sprinkle salt and black pepper. Toss everything together and stir-fry for 1–2 more minutes on high heat to evaporate any excess liquid. Serve hot.
