Peel and cut the potatoes into medium cubes; finely chop the onions, tomatoes, and green chili.
Heat vegetable oil in a heavy-bottomed pan over medium heat. Add cumin seeds and allow them to sizzle for 30 seconds.
Add chopped onions and green chili. Saute on medium flame for 3-4 minutes until onions are soft and golden.
Stir in turmeric powder, coriander powder, red chili powder, and salt. Mix well, then add chopped tomatoes and cook for 6-7 minutes on medium-low heat until tomatoes are soft.
Add potato cubes, stir to coat evenly with spices. Pour in water, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until potatoes are tender.
Uncover, sprinkle garam masala, and simmer for 3 more minutes to enhance aroma. Adjust salt as needed.
Garnish with fresh cilantro before serving hot with rice or flatbreads.
