Dhebra is a traditional Indian bread with authentic flavors and a satisfying texture. This versatile accompaniment is a family meal essential that pairs perfectly with curries and chutneys.
In a large mixing bowl, combine whole wheat flour, millet flour, and salt; mix thoroughly.
Add fresh fenugreek leaves, green chili, turmeric powder, ground cumin, and sesame seeds; blend the dry and seasoning ingredients evenly.
Pour yogurt and vegetable oil over the mixture, then knead steadily; gradually add a little water as needed to form a soft, pliable dough.
Cover the dough and let it rest for at least 15 minutes to allow moisture absorption and easier rolling.
Divide the dough into equal balls. On a lightly floured surface, roll each ball into a 5-inch thick round, keeping surface generously dusted to avoid sticking.
Heat a skillet or tawa over medium flame. Place a rolled dhebra on the hot surface and cook for 1–2 minutes until small bubbles appear, then flip.
Brush lightly with oil and continue cooking each side while pressing gently for even browning, roughly 2 minutes per side; watch heat to avoid burning.
Remove from skillet when golden and stack in a clean kitchen towel to keep warm and soft until serving.
