Small fried pizza dough rounds topped with tomato and mozzarella then briefly baked are Neapolitan magic. This mediterranean family appetizer delivers fresh flavors with a satisfying crunch.
Combine flour, yeast, salt, and warm water in a large bowl. Stir until a soft dough forms, then knead by hand for 5–7 minutes until smooth.
Cover the dough with a damp towel and let it rise in a warm place for 60 minutes, until doubled in size.
Divide the dough into 6 equal balls. Flatten each ball into a round about 3 inches wide.
Heat 1 tbsp olive oil in a skillet over medium-high heat. Fry each round for 1–2 minutes per side until golden and crisp. Drain briefly on paper towels.
Top each fried dough round with a spoonful of tomato sauce, sliced mozzarella, and fresh basil. Bake in a preheated oven at 400°F for 3–5 minutes, just until cheese melts and bubbles. Serve immediately.
