Golden-breaded chicken parmesan smothered in marinara and melted mozzarella is an iconic family dinner. This high protein chicken dish pairs perfectly with pasta or a fresh garden salad.
Preheat oven to 425°F. Slice each chicken breast horizontally to create two thinner cutlets for even cooking.
Season chicken on both sides with salt, pepper, and garlic powder. Dredge each cutlet in flour, shaking off excess.
Beat eggs in a shallow dish. Dip each floured cutlet into egg, then coat with a mixture of panko, parmesan, and Italian seasoning.
Heat olive oil in a large oven-safe skillet over medium-high heat. Sear breaded chicken cutlets for 2-3 minutes per side until golden, then remove from heat.
Spread 1 cup marinara sauce over the bottom of a baking dish. Arrange seared chicken over sauce, top with remaining sauce and mozzarella cheese. Bake uncovered for 18–20 minutes, until cheese is melted and chicken reaches 165°F internal temperature.
Let rest 5 minutes before serving for juices to redistribute.
