Napa cabbage is slowly braised until silky-soft in a savory broth. This vegetarian, low calorie family dish develops a deep, sweet flavor through patient cooking.
Cut the napa cabbage into 2-inch wide pieces; slice the onion and carrot thinly for even cooking.
Heat sesame oil in a large pot over medium heat. Add onion and carrot; sauté until onions turn translucent, about 5 minutes.
Stir in minced garlic and napa cabbage pieces; toss well and cook for 2-3 minutes, letting cabbage begin to wilt.
Pour in vegetable broth, soy sauce, sugar, salt, and pepper. Stir, cover, and bring to a simmer over medium-low heat.
Reduce heat to low. Braise the cabbage gently for 30–35 minutes, stirring occasionally. Uncover and let simmer for 5 additional minutes to reduce excess liquid and intensify flavors. Serve hot.
