Moist pear and chocolate cake is a classic Italian flavor combination. This beloved mediterranean dessert balances fruit and chocolate for family enjoyment.
Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper for easy removal.
Peel, core, and dice one pear; thinly slice the second pear and set aside the slices for decorating the top. Pat all pieces dry to remove excess moisture.
In a heatproof bowl, melt the chopped chocolate with the butter over a pot of just-simmering water (double boiler), stirring until smooth. Remove from heat and let it cool slightly.
In a large mixing bowl, whisk eggs with sugar and vanilla extract until pale and slightly thickened. Stir in the melted chocolate mixture, then mix in the milk.
Fold in flour, baking powder, and salt until just combined, then gently fold in the diced pear. Pour the batter into the prepared pan, smoothing the surface. Arrange the sliced pear on top for a decorative pattern.
Bake on the middle rack for 40–45 minutes, or until a toothpick inserted near the center comes out clean and the top feels set (do not overbake to retain moisture).
Cool in the pan for 15–20 minutes before running a knife around the edge and unmolding. Serve at room temperature.
