Atte Ka Halwa is a rich, aromatic Indian dessert slow-cooked with ghee, sugar, and cardamom until luscious. This beloved sweet is a family tradition for festivals, celebrations, and special occasions.
In a heavy-bottomed pan over medium-low heat, melt the ghee fully before adding wheat flour.
Add whole wheat flour to the ghee and continuously stir for 12–15 minutes, adjusting heat to low as needed to prevent burning, until it darkens and releases a nutty aroma.
Meanwhile, in a separate small saucepan, bring water and sugar to a gentle boil over medium heat. Stir to dissolve sugar completely.
Carefully and gradually pour the hot sugar-water mixture into the roasted flour, stirring constantly to avoid lumps and splattering (watch for steam).
Cook the mixture on low heat, stirring frequently, until it thickens and starts to leave the sides of the pan (about 7–10 minutes). Sprinkle ground cardamom and half of the sliced almonds, mix, and cook for an additional minute before removing from heat.
Transfer the halwa to a serving dish, garnish with remaining almonds, and serve warm.
