Anhui stinky mandarin fish is a fermented, pan-fried delicacy with a pungent, complex flavor. A high protein, fresh regional specialty for adventurous family meals.
Pat the cleaned mandarin fish dry. Using a sharp knife, make shallow diagonal slashes on both sides for even flavor absorption.
Rub salt thoroughly over the entire fish, pushing some into the slashes and cavity. Place fish in a shallow dish; refrigerate uncovered for 8-12 hours to ferment and develop pungency.
After fermentation, rinse the fish quickly under cold water to remove excess salt. Pat dry again with paper towels.
Place scallion pieces and ginger slices inside the cavity for aroma and moisture retention. Drizzle Shaoxing wine and sprinkle with white pepper over both sides.
Heat oil in a wide nonstick skillet over medium-high heat. When shimmering, lower the fish in carefully. Fry for 4-5 minutes per side, adjusting the heat so the skin crisps without burning.
Once the fish is crispy and golden on both sides and fully cooked through, transfer gently to a warm serving platter and serve immediately.
