Glutinous rice flour is steamed into a soft, chewy cake that can be sweet or savory. This versatile family treat is a traditional Chinese New Year food symbolizing prosperity and upward progress.
In a large mixing bowl, combine 2 cups of glutinous rice flour with 1 cup of sugar and 1 tsp baking powder. Whisk thoroughly for even distribution.
Incorporate 1.5 cups of water, pouring gradually while stirring to form a smooth, pourable batter with no lumps.
Add 2 tbsp vegetable oil and 1/4 tsp salt; stir well until the batter looks glossy and fully mixed.
Line a round or square 8-inch cake pan with parchment paper or lightly oil the bottom. Pour the batter in, tap gently to remove air bubbles and smooth the surface.
Prepare a steamer at medium-high heat. When steam rises steadily, place the cake pan inside. Cover with a clean cloth under the lid to prevent condensation from dripping onto the cake.
Steam over medium-high heat for 50–60 minutes, checking occasionally to ensure the water doesn’t run dry. The rice cake is done when the surface turns translucent and a toothpick comes out clean.
Carefully remove the pan from the steamer using mitts. Allow to cool for at least 30 minutes before unmolding and slicing into pieces.
