Roast a whole chicken on Sunday and you've got high protein dinner plus leftovers for days. The garlic gets golden and sweet — spread it on everything.
Preheat the oven to 425°F (220°C). Let the whole chicken sit at room temperature for 30 minutes before roasting for even cooking.
Pat the chicken dry thoroughly with paper towels. Rub the skin and cavity with olive oil, then season generously with salt and black pepper.
Cut the lemon in half and stuff it inside the cavity along with the fresh thyme and one head of garlic (halved horizontally).
Tuck the wings under the body and tie the legs together with kitchen twine for consistent moisture. Place the chicken breast-side up on a rack in a roasting pan.
Scatter the remaining garlic cloves (from the second head, skins on) around the chicken. Roast for 20 minutes at high heat, then reduce oven temperature to 375°F (190°C) and continue roasting for 60-70 more minutes, or until the thickest part of the thigh registers 165°F (74°C).
During the last 15 minutes, baste the chicken with pan juices to enhance browning and flavor. Let the chicken rest, tented with foil, for 15 minutes before carving for juiciest results.
