Slice the nian gao into 1/4-inch thick pieces for even cooking.
Crack the eggs into a bowl, add salt and sugar, and beat until fully combined.
Chop the scallions finely and mix them into the egg mixture.
Heat a nonstick skillet over medium heat and add 1 tbsp of vegetable oil, swirling to coat the bottom.
Dip each nian gao slice into the egg mixture, allowing excess to drip off, then lay them in a single layer in the pan.
Pan-fry for 2-3 minutes on each side or until edges are golden and crisp, adding more oil if necessary and working in batches.
Remove fried nian gao and drain briefly on a paper towel before serving hot.
