Round, sweet, and utterly irresistible, Boondi Ladoo is a traditional Indian confection cherished for generations. This festive treat is a must-have at family celebrations, Diwali, and special occasions.
Prepare the boondi batter by whisking chickpea flour with 0.75 cup water to a smooth, lump-free consistency.
Heat oil in a deep frying pan over medium-high until hot but not smoking. Check by dropping a little batter—boondis should rise and not spread.
Holding a slotted spoon above the pan, pour some batter and gently tap to let droplets fall into the hot oil. Fry the boondi until just golden, stirring gently for even coloring, about 2–3 minutes. Remove and drain on paper towels. Repeat for all batter.
In a saucepan, combine 1.5 cups sugar and 0.5 cup water. Bring to a boil, then simmer until it reaches a single-thread consistency, about 8–10 minutes. Stir in cardamom and saffron.
Immediately mix the warm boondi into the hot sugar syrup. Add raisins and slivered almonds, stirring well to coat all pieces. Keep the mixture warm by covering with a lid or placing over a very low heat for 2–3 minutes.
Once the mixture is cool enough to handle yet still pliable, grease your palms with a tiny bit of oil and shape the mixture into small, firm balls (ladoo), about 1.5 inches across. Work quickly so the ladoos hold together.
Allow Boondi Ladoo to cool completely before serving or storing in an airtight container.
