Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds per side to make them pliable.
In a bowl, mix the Mexican crema, shredded Monterey Jack cheese, salt, and black pepper until well combined.
Place about 1 tablespoon of the crema mixture along the center of each tortilla and roll them up tightly.
Heat vegetable oil in a large skillet over medium heat. Once hot, add the taquitos seam-side down in batches to avoid crowding.
Fry taquitos for 2–3 minutes per side, turning with tongs, until golden and crispy. Drain on paper towels before serving.
