Fluffy steamed buns oozing with golden egg custard are an irresistible breakfast or snack. A family favorite with rich, creamy fresh filling.
In a large bowl, mix all-purpose flour, instant yeast, 2 tbsp sugar, and salt. Warm the milk until just lukewarm (about 105°F/40°C), then gradually pour into the flour mixture while stirring to form a soft dough.
Knead the dough on a lightly floured surface until smooth and elastic, about 10 minutes. Incorporate the unsalted butter cube by cube until fully absorbed. Cover and let rise in a warm area for 1 hour or until doubled.
For the custard, whisk together eggs, remaining sugar, cornstarch, and milk in a saucepan. Cook over medium-low heat, whisking constantly, until the mixture thickens. Remove from heat, stir in vanilla extract and 1 tbsp butter, then chill until cooled.
Punch down the risen dough and divide into 6 equal pieces. Flatten each piece, add a spoonful of cooled custard, and pinch edges to seal. Place each bun seam-side down on parchment squares.
Arrange buns in a steamer, leaving space for expansion. Cover and proof for 20 minutes. Steam buns over boiling water for 12 minutes, keeping the lid slightly ajar in the final minute to prevent collapse. Let buns rest for 2 minutes before serving for best texture.
