Spaghetti dressed in colatura, a fermented anchovy essence from Cetara on the Amalfi Coast. This unique mediterranean dish is high in protein and bursting with concentrated umami freshness.
Bring a large pot of water to a boil, adding only half the usual salt, since colatura is quite salty. Cook spaghetti until just al dente, about 1 minute less than package instructions.
While pasta cooks, gently warm the olive oil in a large skillet over low heat. Add finely minced garlic and cook gently for about 1-2 minutes, making sure not to brown the garlic.
Drain the spaghetti, reserving 1/2 cup of pasta water. Transfer pasta to the skillet with the garlic-oil, increase heat to medium-low and toss well.
Add the colatura di alici, red pepper flakes, and a splash of reserved pasta water to the skillet. Toss vigorously for 1 minute so everything is evenly coated and the starch in the water helps the sauce cling.
Off the heat, add chopped parsley and black pepper. Toss once more and serve immediately, adjusting seasoning if needed.
