Nihari Festive is a rich, slow-cooked Indian meat curry with tender pieces and aromatic spices. This high protein dish is a carnivore favorite and a hearty option for family dinners.
Heat ghee in a large heavy-bottomed pot over medium heat, then add sliced onions and cook until caramelized and golden brown, stirring often.
Add the ginger and garlic, sauté for 2 minutes until fragrant, then add beef shank pieces and sear on all sides for 4–5 minutes.
Sprinkle nihari masala powder, red chili powder, turmeric, and salt over the beef, stirring to coat evenly; reduce heat to low to prevent burning the spices.
Stir in all-purpose flour to thicken, then gradually pour in water while mixing to avoid lumps; cover and simmer on very low heat for 3 hours, stirring every 30 minutes.
Check meat tenderness with a fork—if not tender, continue simmering covered for another 30–45 minutes; adjust salt if needed, skim excess fat, and keep curry warm on lowest setting until serving.
