Pork loin in a tangy mustard sauce offers a northern Italian twist on roast meat. This high protein mediterranean family dinner is a fresh carnivore dish with a bright, sharp flavor.
Preheat the oven to 375°F. Pat the pork loin dry and season it evenly with kosher salt and black pepper.
In a large ovenproof skillet, heat the olive oil over medium-high until shimmering. Sear the pork loin on all sides until golden brown, about 2 minutes per side.
Reduce the heat to medium. Add the sliced onion and smashed garlic cloves to the pan, stirring until the onion softens, around 4 minutes.
Deglaze the pan with the dry white wine, scraping up any browned bits. Stir in the chicken broth, both mustards, and fresh thyme leaves. Simmer for 2 minutes.
Return the seared pork to the pan, spoon sauce over the top, and transfer the skillet (uncovered) to the oven. Roast for 30–40 minutes, or until pork reaches an internal temperature of 145°F.
Rest the pork on a cutting board for 10 minutes. While resting, simmer the skillet sauce on the stovetop over medium heat until slightly thickened. Slice pork and serve with mustard sauce spooned over each portion.
