Mexican wedding rice cooked to perfection serves as a festive side dish for celebrations. This family-friendly, vegetarian dish is a fresh, traditional accompaniment to mole and main courses.
Rinse the rice in a fine mesh strainer under cold water until the water runs clear to remove surface starch and help achieve fluffy grains.
Heat olive oil in a large heavy-bottomed saucepan over medium heat. Add the rice and toast for 4–5 minutes, stirring constantly, until the rice turns opaque and lightly golden.
Add finely chopped onion and minced garlic to the pan; sauté for 2 minutes, just until softened and aromatic.
Stir in diced tomatoes (blend for a smoother texture if desired), finely sliced carrot, peas, cumin, salt, and pepper. Continue cooking for 2 more minutes, allowing vegetables and spices to release flavor.
Pour in warm vegetable broth, stir once, and bring to a gentle simmer. Cover tightly, reduce heat to low, and cook without lifting the lid for 15–18 minutes until the rice has absorbed the liquid.
