Besan Burfi is a smooth, fudge-like Indian sweet made with condensed milk and premium ingredients. This elegant confection is a treasured gift during Diwali and a centerpiece of family sweet boxes.
Line an 8-inch square pan with parchment paper or lightly grease it and set aside.
In a heavy skillet over medium-low heat, melt the unsalted butter, then add chickpea flour. Stir continuously, keeping the heat low, to ensure slow, even roasting for 12–15 minutes until the flour turns deep golden and aromatic.
Add sweetened condensed milk to the roasted flour while stirring briskly. Continue stirring on low-medium heat; the mixture will begin to leave the sides and thicken like fudge.
Sprinkle in cardamom powder, pinch of salt, and most of the chopped nuts (reserving some for garnish). Keep stirring, scraping the sides, until it forms a dense, soft mass and shows a faint sheen.
Immediately pour the mixture into the prepared pan. Smooth quickly with a spatula, garnish with reserved nuts, and let cool at room temperature. Cut into squares once firm.
