In a large pot over medium heat, add cooked dal, all chopped vegetables, remaining salt, sambhar powder, and tamarind pulp. Simmer gently for 15 minutes until vegetables are tender.
In a separate small pan, heat oil over medium-high; add mustard seeds and let them crackle, then add dried red chilies and curry leaves. Stir for 45 seconds to release aroma.
Add the tempering from the small pan directly into the simmering stew. Mix well and cook for 3-5 more minutes on low heat, tasting and adjusting salt if needed. Rest for 8 minutes before serving to let flavors meld.
