Florentine-style tripe in tomato sauce topped with Parmigiano is Tuscan soul food. This high protein mediterranean dish is a traditional family meal that's lean and rich in collagen.
Prepare the tripe by rinsing thoroughly under cold water, then trim and slice into strips roughly 1 inch wide.
In a large pot over medium heat, add olive oil. Sauté finely chopped onion, carrot, and celery for 5–7 minutes until softened. Add minced garlic and cook for 1 minute.
Increase heat to medium-high and add the sliced tripe. Stir well and cook for about 10 minutes, allowing any excess moisture to evaporate and lightly brown the tripe.
Add the canned tomatoes, crushing them by hand as you add. Stir in salt, pepper, and chili flakes. Reduce heat to low, cover, and simmer gently for 60–75 minutes until the tripe is tender.
Just before serving, stir in chopped parsley, taste and adjust seasoning. Portion into bowls and generously top with Parmigiano-Reggiano.
