Rinse the cleaned anchovies under cold water, pat dry thoroughly with paper towels to remove excess moisture.
In a shallow bowl, beat the eggs until smooth. Place the all-purpose flour in another bowl.
Heat the extra virgin olive oil in a large skillet over medium-high heat until it shimmers but is not smoking (about 350°F).
Season anchovies lightly with sea salt and black pepper. Dredge each anchovy first in flour, then dip into beaten eggs, ensuring an even coating.
Carefully add dredged anchovies to the hot oil in batches. Fry for 2–3 minutes per side, turning once, until golden and crispy. Remove with a slotted spoon and drain on paper towels.
