Rice simmered with fresh sweet corn kernels and a touch of butter and herbs. This vegetarian, family-friendly side celebrates fresh seasonal corn in a simple, comforting way.
Rinse 1 cup of long grain white rice under cold water until the water runs clear; drain thoroughly.
In a medium saucepan over medium heat, melt 2 tbsp butter until it bubbles but does not brown.
Add the rinsed rice and toast, stirring gently, for 2–3 minutes until the rice appears slightly opaque.
Stir in 1.5 cups fresh sweet corn kernels and 0.5 tsp salt, mixing well to distribute corn evenly.
Pour in 2 cups water and bring to a gentle boil over medium-high heat; immediately reduce heat to low, cover the pan tightly, and simmer for 18–20 minutes without lifting the lid.
Turn off the heat and let the rice stand, covered, for 5 minutes to finish steaming.
Gently fluff the rice with a fork and fold in 2 tbsp chopped fresh cilantro right before serving.
