Pudina Paratha is a flaky, stuffed Indian flatbread that's pan-fried to golden perfection with butter or ghee. This hearty vegetarian bread is a satisfying family breakfast or dinner accompaniment.
Wash and finely chop the fresh mint leaves. In a mixing bowl, combine all-purpose flour, salt, carom seeds, and red chili powder for even seasoning.
Add the chopped mint leaves to the dry mixture and mix thoroughly to distribute the mint evenly through the flour.
Pour in water gradually and knead into a smooth, medium-soft dough, adjusting water as needed. Allow dough to rest, covered, for 15 minutes to let the gluten relax.
Divide the dough into 8 equal portions. Roll each ball into a 6-inch disc; spread a thin layer of butter or ghee on the surface, sprinkle with a pinch more mint if desired, then fold into quarters and roll again to create flaky layers.
Heat a skillet or tawa over medium heat. Place each paratha on the hot skillet and cook for 1 minute. Flip, brush with melted butter or ghee, and cook each side for another 1-2 minutes, pressing gently with a spatula for even browning until golden spots appear and flakes develop.
Stack cooked parathas in a clean cloth to keep warm and soft. Serve hot with your favorite curry or yogurt.
