Simple yet aromatic, Masale Bhaat is a traditional Indian rice preparation with authentic spicing. This vegetarian dish is a family kitchen staple that adds variety and flavor to everyday meals.
Rinse the basmati rice thoroughly with cold water and soak for 20 minutes, then drain.
Heat ghee in a heavy-bottomed pan over medium heat. Add mustard seeds and cumin seeds; let them splutter.
Immediately add asafoetida, green chilies, and turmeric powder. Stir for 30 seconds, ensuring spices don’t burn.
Add mixed vegetables and sauté for 2–3 minutes, stirring regularly for even cooking.
Stir in the Masala bhaat spice mix, salt, and grated coconut. Add rice, mix gently, then pour in 2 cups water. Cover tightly and cook on low heat for 18–20 minutes until rice is tender and water is absorbed.
Turn off heat, let rest for 5 minutes. Fluff rice gently with a fork, garnish with cashews, and serve hot.
