Chicken kadhai is a quick-cooked, wok-style curry bursting with bell peppers, tomatoes, and freshly pounded spices. A high protein chicken meal perfect for busy weeknight family dinners.
Heat oil in a large kadhai or wok over medium-high heat. Once hot, add coriander seeds and cumin seeds; toast for 1 minute until fragrant.
Add sliced onions and sauté for 3–4 minutes, stirring occasionally, until softened and just starting to brown.
Stir in minced garlic, grated ginger, and dried red chilies. Cook for 1 minute to release aromas, ensuring the spices don't scorch.
Add chopped tomatoes, turmeric, and salt; cook on medium heat for 4–5 minutes. Stir occasionally and let tomatoes soften to create a chunky base.
Increase heat to high. Add chicken pieces; sauté for 2 minutes, then lower heat to medium and cook uncovered for 7–8 minutes, stirring so chicken absorbs the masala and remains juicy.
Add diced bell peppers and black pepper. Stir well, cover pan loosely, and cook for a final 5 minutes at medium heat, ensuring bell peppers stay slightly crisp.
Finish with garam masala. Toss everything on high heat for 1 minute to enrich aroma and flavor, then serve hot.
