Crisp lotus root slices are wok-fried with a light seasoning to highlight their unique crunchy texture. This vegetarian, healthy dish is low calorie, fresh, and a family favorite in Central China.
Peel the lotus root and slice it thinly (about 1/8-inch). Soak the slices in water with a splash of vinegar to prevent browning.
Julienne the carrot and green bell pepper into thin strips for even, quick cooking.
Heat a wok or large skillet over medium-high heat; add the vegetable oil.
Add the lotus root slices and carrot, stir-frying for 2–3 minutes until the lotus root starts turning slightly translucent but remains crisp.
Add the bell pepper, then pour in soy sauce, rice vinegar, sugar, salt, and white pepper. Stir-fry everything for another 2 minutes, maintaining high heat so the vegetables stay crunchy.
Drizzle with sesame oil in the last 30 seconds of cooking. Toss well and immediately remove from the heat. Serve hot.
