Sweet eight treasure glutinous rice studded with dried fruits and nuts is a festive dessert. A family tradition with colorful, naturally sweet ingredients.
Rinse the glutinous rice thoroughly in cold water until the water runs clear. Soak the rice in fresh water for at least 4 hours, or overnight, then drain.
Prepare the dried fruits and lotus seeds: pit and halve the red dates, soak lotus seeds in hot water until softened, and roughly chop any large dried fruits.
Lightly grease a heatproof bowl with unsalted butter. Place some of the chopped dried fruits and pine nuts decoratively on the bottom and sides of the bowl.
Spread half of the soaked glutinous rice in an even layer, then scatter half of the prepared fruits and nuts over it. Repeat with the remaining rice and fruits, gently pressing each layer for even steaming.
Mix 1.5 cups water, granulated sugar, honey, and a pinch of salt until dissolved. Pour this evenly over the layered rice. Cover tightly with foil.
Steam over medium-high heat for 80–90 minutes, checking every 30 minutes to ensure there is enough water; add more if needed to avoid drying out.
Remove from heat. Carefully invert the dessert onto a serving plate while warm. Brush the surface with additional honey for shine and extra sweetness if desired before serving.
