Gently rinse and drain the silken tofu. Cut into 1-inch cubes, being careful not to break them.
Clean and slice the mixed mushrooms into bite-size pieces. Mince garlic and ginger finely. Slice the scallions into thin rings, separating white and green parts.
In a large pot over medium heat, add a splash of vegetable broth and sauté the garlic, ginger, and the white scallion parts for 2 minutes until fragrant.
Add mushrooms and cook for 3-4 minutes, stirring occasionally, until they start to soften and release their moisture. Adjust to medium-high if needed for evaporation.
