A beautifully glazed ham with a caramelized sweet coating is a high protein centerpiece for family holiday dinners. Leftovers are incredibly versatile for sandwiches, soups, and meal prep throughout the week.
Preheat oven to 325°F and set rack in lower third. Remove ham from packaging and pat dry with paper towels.
Place ham, flat side down, on a large roasting rack inside a roasting pan. Score the surface in a crosshatch diamond pattern, cutting about 1/4-inch deep.
In a small saucepan over medium heat, melt butter. Stir in brown sugar, honey, Dijon mustard, apple cider vinegar, ground cloves, and black pepper. Simmer for 2-3 minutes, stirring, until smooth and glossy.
Brush half the glaze generously over the ham. Cover ham loosely with foil and bake for 90 minutes, basting with pan juices every 30 minutes.
Remove foil. Brush remaining glaze evenly over ham. Increase oven temperature to 400°F and continue roasting for 25-30 minutes, basting every 10 minutes, until the glaze is deeply caramelized and internal temperature reaches 140°F. Let rest 15 minutes before slicing.
