Lucknowi Galouti is a succulent Indian grilled meat preparation with aromatic spices and a melt-in-your-mouth texture. This high protein dish is perfect for carnivore diets and makes an impressive family appetizer.
In a large bowl, combine ground lamb, finely chopped onion, grated ginger, and minced garlic. Mix thoroughly to ensure even spice distribution.
Add the roasted gram flour and plain yogurt, then sprinkle in all seasoning ingredients: garam masala, cumin, coriander, cardamom, cayenne pepper, salt, and black pepper. Mix until just combined; do not overwork the meat to maintain tenderness.
Cover the bowl and marinate the mixture in the refrigerator for at least 45 minutes to allow flavors to meld.
Remove mixture from fridge. Shape small patties about 1/2 inch thick for optimal quick cooking and even texture.
Heat a nonstick skillet or grill pan over medium heat and add half the ghee. Once hot but not smoking, cook patties in batches for 3–4 minutes per side, pressing gently to maximize surface browning. Avoid high heat to prevent drying out the meat.
Rest cooked galouti on a plate for 5 minutes before serving to retain juices. Serve hot with additional ghee brushed on top if desired.
