Rabri is a traditional Indian sweet that embodies the rich confectionery heritage of the subcontinent. This beloved dessert is a family favorite at festivals, weddings, and celebrations.
Pour the whole milk into a heavy-bottomed, wide pan and bring it to a gentle boil over medium heat, stirring frequently to prevent scorching.
Once boiling, reduce the heat to low and simmer the milk, scraping the cream (malai) that forms on the sides into the center every 10 minutes.
Continue stirring and reducing the milk for 45-55 minutes until it thickens to half its original volume and develops layers of cream.
Add sugar, stirring vigorously until it dissolves and the rabri thickens further; monitor heat so the bottom doesn't brown.
Mix in cardamom powder, rose water, and a pinch of saffron strands, and simmer for 2 more minutes before removing from heat.
Let the rabri cool to room temperature, then refrigerate for 2-3 hours; garnish with chopped pistachios and almonds just before serving.
