Aromatic Chinese celery is wok-tossed with a light seasoning for a bold, herbal side dish. This vegetarian, low calorie family side is healthy and adds bright flavor to any meal.
Prep Chinese celery by trimming the ends and cutting into 2-inch batons. Slice carrot into thin matchsticks, mince the garlic, and chop scallions.
Cut firm tofu into small cubes and pat dry with paper towels for best browning.
Heat a wok or large skillet on medium-high and add 1 tbsp vegetable oil. Swirl to coat and add tofu cubes; sauté, turning occasionally, until lightly golden, about 3-4 minutes.
Add minced garlic and white parts of scallion to the wok and stir-fry for 30 seconds until aromatic (do not burn the garlic).
Increase heat to high. Add Chinese celery and carrot; toss vigorously for 1 minute to keep the veggies crisp yet tender.
Pour in soy sauce, sesame oil, salt, and white pepper. Stir-fry another minute, quickly coating all ingredients without overcooking the celery.
Add green scallion slices, toss just to combine, and remove from heat immediately to preserve bright color and crunch. Serve hot.
