Heat 1 tbsp of olive oil in a large nonstick skillet over medium heat until it shimmers but does not smoke.
Add chopped onions and red bell pepper to the skillet; sauté for 3–4 minutes, stirring occasionally, until the onions become translucent and the peppers are tender.
Push the vegetables to one side and add the crumbled tofu to the pan; increase the heat to medium-high and cook for 2 minutes without stirring to develop some golden color.
