Crispy fried tortillas topped with smoky chipotle chicken tinga, lettuce, crema, and cheese. These high protein, chicken tostadas make a fresh, family-friendly dinner or appetizer.
In a skillet over medium heat, add 4 tbsp vegetable oil and fry the corn tortillas on both sides until golden and completely crisp. Transfer to a paper towel-lined plate.
Slice the white onion thinly. In a separate pan over medium heat, add 2 tbsp oil and sauté the onion until soft and just caramelized, about 6 minutes, then add minced garlic and cook for 1 minute.
Roughly chop tomatoes and blend with chipotle peppers in adobo until smooth.
Add the blended chipotle-tomato sauce to the onions in the pan, stir, season with dried oregano, salt, and black pepper, and simmer over medium-low heat for 6 minutes to thicken and develop smoky flavor.
Add the shredded chicken to the sauce, tossing and simmering for 3-4 minutes to absorb flavor, then remove from heat.
To assemble, top each tostada with a generous layer of the hot tinga mixture, shredded lettuce, dollops of crema, and a sprinkle of queso fresco. Serve immediately while the tortillas are crisp.
